This can be found in the most sensational collection of songs, Prison And Mountain Songs (For Boys).

Most of the song titles on the back of "Saint Dude" are references to older sheet music/songs, though a few are just jokes made up by Beck and whoever helped him fill out the artwork. "Sunny Jim" refers to a 1902 logo for a whole wheat flake cereal. Advertisements with Sunny Jim were told in song, and according to wikipedia, were "wildly successful."

This, as was the way back then, led to a number of both knock-off Sunny Jim songs, as well as knock-off Sunny Jim products (like a peanut butter). The songs probably showed up in Beck's sheet music research.

I am not quite sure how he relates to prison or mountain songs though!
